A common bread mould. The species used for pu'er tea is probably Aspergillus luchuensis.

How it is used for food
It is grown on sugar residues and converts the sugar to citric acid used as a food additive. A fructooligisaccharide on fermented sucrose is available in powdered form and sprinkled on cereals and fruit or stirred into drinks.
