What it is like
Gundelia tournefortii is a PERENNIAL growing to 0.4 m (1ft 4in). The species is hermaphrodite (has both male and female organs) and is pollinated by Insects. Suitable for: light (sandy) and medium (loamy) soils and prefers well-drained soil. Suitable pH: mildly acid, neutral and basic (mildly alkaline) soils. It cannot grow in the shade. It prefers moist soil.

The thick flowering stem, with the young and still undeveloped flower buds, is sold in the local markets in Jerusalem. It is a sought after vegetable. Immature flowering heads - cooked. Used like globe artichokes. Leaves - cooked. Root - cooked. Seed - cooked.
Root: includes bulbs, corms, tubers, rhizomes etc.
Seed: includes nuts, cereals, peas and beans.
Stem: this often intergrades into leaves.

Prefers a sandy peaty soil. Requires a sunny position and a well-drained soil. Cultivated in Jerusalem as a vegetable.
Propagating it: Seed - sow spring in a cold frame. When they are large enough to handle, prick the seedlings out into individual pots and plant them out in the summer. Division.
